I made this recipe last May, took pictures, saved them on my computer, and promptly forgot about them. Until I asked on facebook what are some of your favorite ways to cook zucchini and my friend Keri reminded me of this very recipe. A recipe that she shared with me last May that I quickly made and then forgot about. You know that one, duh!
Which, of course, happened to be after I had found a different zucchini brownie recipe that I made and took pictures of. So now not only do I have one amazing zucchini brownie recipe, I have two.
The recipes are slightly different and both are absolutely delicious. I will share the other recipe tomorrow.
Zucchini Brownies I, as I am calling them, are slightly more cake-like with an airy texture and are melt in your mouth chocolaty.
Ingredients: 2 c flour, 1 tsp salt, 1 1/2 tsp baking soda, 1/3 c unsweetened cocoa powder, 1 c sugar, 2 eggs, 1/2 cup oil, 2 c grated zucchini, 1 tsp vanilla, 1/2 c chopped pecans or walnuts
Shredded zucchini, I shredded a bunch and saved it in my fridge for later use.
I used a cheese grater to grate the zucchini, and did not squeeze drain any excess liquid.
In a large mixing bowl, sift the dry ingredients; flour, sugar, baking soda, salt and cocoa powder.
I used a strainer and just tap it to sift.
Then in another bowl add the wet ingredients; oil, eggs, zucchini and vanilla. Mix well.
Add the wet ingredients to the dry and mix until incorporated.
Fold in the nuts.
Spray a jelly roll pan, mine is a 18 X 13.
And pour and smooth out the brownie batter.
Bake at 350 for 20-25 minutes.
Cut into squares and serve.
Don’t you just love the little green specks of zucchini.

Grease 10×15 jellyroll pan. In lg mixing bowl sift together dry ingredients. Combine egg, zucchini, oil and vanilla; combine into dry ingredients. Fold in nuts. Bake for 20-25 min cool then cut into squares.

I wouldn’t have thought to add them to brownies, but why not? We add them to muffins and bread. Sounds delicious and chocolate-y!
