This recipe is my absolute favorite go to recipe. I usually have all ingredient on hand or can make do with what I have. I love this because it is so versatile, use what you like and what you have on hand. I also like to add fresh mushrooms, any type of summer squash, varying sauces, etc. Play around with it!
List of ingredients
1 lb ground turkey (I usually use beef but I was out), I onion, 2 of DT’s garden bell peppers, 2 zucchini, generous amount of garlic (5 cloves), 1 jar of favorite spaghetti sauce, 1 jar of Antipasto, favorite pasta, salt & pepper, basil (not pictured I forgot, sorry)
Start off with a little olive oil
Brown the meat & add salt and pepper
Chop veggies, smash garlic with the flat end of a knife or scraper, then finely chop.
Add onions and bell peppers, and cook for 5 minutes
Start pasta water on high heat to bring to a boil add a little salt
Veggies after 5 minutes cooking, slightly wilted and smells so good already
Add zukes & finely chopped garlic, add salt & pepper
Cook another 5 minutes, now it really really smells good!~
Add sauce, and Antipasto. I just have to give a brief description of Texas Antipasto, this is a tomato based heavenly veggie filled deliciousness. I love it because it has olives, pickles, pearl onions, green beans, lima beans, cauliflower, and a few other little special treats. When adding it to a dish, every time I come across a olive or anything listed above Its like finding a special little treat. I just love this antipasto, as you couldn’t tell!!! You have to try it, I am not a sales person or getting anything for this I just love it that much!! No joke, seriously!! Go check it out you won’t regret it!!
I love it in spaghetti (of course), meatloaf, on fish, meat patties, over a block of cream cheese with crackers, so many good ways to use it. Check out their website and I believe you can order on-line, but be careful once you do you will be addicted. My Mom and I order a case of it each year, we love it so much!
Add pasta to boiling water, cook about 10-15 minutes until pasta is Al Dente
Sauce is ready!
Strain Pasta
Plate and add some fresh basil.
Enjoy!
