This recipe is so ridiculously easy, I can’t believe I even took pictures of the process, but I guess old habits die hard.
So you know those recipes that call for 1 cup of pureed pumpkin, and then you have leftovers, that you just can’t bare with throwing away, well don’t. Save that pumpkin. I’ve also created another recipe to use leftover pumpkin.
This is a super easy dessert, for any time of day, that you don’t have to feel guilty about, my kids loved it too and ate two bowl themselves.
Ingredients: 1 cup Vanilla Yogurt, 4 tablespoons pureed pumpkin, dash of pumpkin pie spice, optional ingredients; chopped pecans, chocolate chips, dried cranberries
In a mixing bowl add the pumpkin and yogurt,
add a dash of pumpkin pie spice. Mix well.
That’s it, that simple!
Serve with your favorite topping.
Or plain, whatever floats your boat.

Mix all together and enjoy. Have fun with this, add mix-ins. Nuts, chocolate chips, dried fruit. My favorite is pecans and dried cranberries.
Hey girl, I stumbled across an article about more ways to use pumpkin puree. Two I’ve tried are pumpkin cream cheese (mix 4 ounces cream cheese with 1/4 cup pumpkin puree and a dash of cinammon) and pumpkin muffins (add 1/4 cup *pumpkin pie filling* and one extra egg to a 8.5 ounce box of corn mufin mix). Both were so good…especially the pumpkin cream cheese on a cinammon bagel, and a cup of chai tea. 🙂
That sounds fantastic, pumkin pie flavors without the guilt! I think it would be especially good with dried cranberries.

Mmmm…I love this. It’s so simple, yet so full of flavor. And “autumn flavors” just so happen to be my favorite. YUM!
I’ve done this with vanilla pudding as well. If you use the sugar free kind it makes a great diet dessert.
Oh yumm! I have some pumpkin puree left over from the cookies I made last night so I might need to get me some yogurt!
I am not a big pumpkin fan – and always cringe a little when the hostess serves pumpkin pie at Thanksgiving! However – there is a great recipe for pumpkin pie which includes Cool Whip or Dream Whip….fluffy and sweet and yummy – love that one!!
This sounds great! I eat yogurt every day so it’s fun to change things up a bit with what I put in it. Never thought to use pumpkin but I love pumpkin so I will definitely be trying this!
