Ok, I promise this is my last pumpkin recipe for awhile.  oh, who am I kidding, I am just getting started, baw-hahaha.

This cake is just lovely, has a hint of pumpkin but not overwhelming at all.  The moist cake and delicious cream cheese icing are a match made in heaven.  Very simple cake to make and everyone will love it.

Ingredients: 15 oz  can solid pack pumpkin, 2 cups sugar, 1 cup unsalted butter (2 sticks), 4 eggs, 1 tsp vanilla 2 cups flour, 2 tsp baking soda, 2 tsp pumpkin pie spice, 1/2 tsp salt

I love using this Nielsen-Massey  Vanilla Bean Paste

In your mixer, add the softened butter and sugar and cream until combined.

Then add the vanilla, and eggs.

and pumpkin, mix well.

In a separate bowl mix, flour, salt, baking soda and pumpkin pie spice.

then slowly mix in the flour.

Pour the batter out on top a greased sheet pan.

Spread it out the batter will be thick.

Bake at 350 for 25-30 minutes, until a toothpick comes out clean.  Set aside to cool.

For your icing:  1/2 cup butter, softened (1 stick), 8 oz – cream cheese, softened, 1 1/2 – tsp. vanilla, 2 1/4 – cups powdered sugar, 5-6 – tsp. milk

Add all the ingredients and mix until smooth and icing consistency, you may need to add more or less milk.

Spread the icing onto the cooled cake.  Slice and enjoy!

But beware you may not be able to only eat one piece!

Pumpkin Sheet Cake with Cream Cheese Icing

15 oz  can solid pack pumpkin
2 cups sugar
1 cup unsalted butter (2 sticks)
4  eggs
1 tsp vanilla
2 cups flour
2 tsp baking soda
2 tsp pumpkin pie spice
1/2 tsp salt

In a mixing bowl, cream the butter and sugar. Add eggs, vanilla, and pumpkin mix well. In a separate bowl combine the dry ingredients and add to the pumpkin mixture, beating until well blended. Pour into a greased sheet baking pan. Bake for 25-35 minutes at 350 degrees. Cool the cake completely and then frost it with the cream cheese icing.

Cream Cheese Icing:
1/2 cup butter, softened (1 stick)
8 oz – cream cheese, softened
1 1/2 – tsp. vanilla
2 1/4 – cups powdered sugar
5-6 – tsp. milk

Mix together until reach desired consistency.
