My favorite recipe as a child was (and still is) Meatloaf, as a matter of fact my mom still cooks this for my as my birthday meal. I just love it. Its warm and comforting, juicy and meaty. Need I say more???? Whats funny is my dad so call “hates” meatloaf. I say this in quotation marks because he complains about eating it but then always eats seconds or third helpings. So my Mom and I don’t believe him. Then if we ask him about it he says well its better this time than it was last time or some kind of excuse like that. He will not admit he like even venture to say really like this. DT on the other hand loves this meat loaf recipe.
I decided to cook this recipe in a muffin tin because it only takes about 30 minutes to cook, but you can surely use the regular loaf pan just cook it for about 1 hour. I now add Antipasto to this recipe to give it a bit more flare, but its really great without it also. Click here to see more recipes using Antipasto.
Ingredients: 1 lb ground beef, 2 slices toast, 2 eggs, 1 tsp garlic powder, 1 tsp Tabasco (optional) , 1/4 cup picante sauce (use 1/2 cup if you don’t use antipasto), 1/4 cup antipasto, 4 slices bacon
In a large bowl to the meat add a splash of Tabasco, and 2 eggs,
Garlic powder, salt and black pepper (optional)
Take your toast pieces and crumble them finely, then mix, the crumble the rest of the toast
Add 1/4 cup (eye ball it) picante and antipasto
Mix well, I always use my hand, but you can you a spoon if you so please
lightly grease a muffin tin or loaf pan
Score the meat into 4 equal parts, then take 1/3 of each meat part and place into muffin pan
Cut 4 slices of bacon into 3rds and place a strip on each mini meatloaf
Bake @ 350 for about 30 minutes if using a loaf pan 50-60 minutes
I love to serve with peas, and potatoes. Here I used carrots and peas mix and a sweet potato.

YUM! Hubby makes our meatloaf and calls it Bear Loaf since his nickname is bear.
I love meatloaf too, but unfortunately the husband, not so much. Even better are meatloaf sandwiches the next day – yum.

I made something similar last week and topped them with mashed potatoes, shredded cheddar and chive “sprinkles”. They looked just like cupcakes. Next time I’m adding bacon, what a great idea!
I’ve been a vegetarian for more than 15 years, but I still miss meatloaf. Especially cold out of the fridge the next day in a sandwich…
It is so nice to hear that you are now making a favorite family recipe. I have never mastered meatloaf. For some reason, on my few attempts, it just wasn’t very god. I will have to give your recipe a whirl.

I’m SOOOOO gonna try this next week on my dinner menu rotation!! It looks so yummy and I love the idea of putting them in a muffin tin with a piece of bacon on top!! With my kids, it’s all about presentation and I think they’d go nuts thinking they were eating “meatloaf muffins”!

What a great way to easily portion control your food. I will have to give this a try next week as I haven’t had meatloaf in a long time and it seems too easy to make!

I like to make a glaze for my meatloaf, with half a can of cranberry jelly (not whole berry) and a couple of tablespoons of brown sugar. REally good!
I make meatloaf very often. Sometime I make them in mini’s sometimes in a loaf. I have never thought to use Tabasco sauce. I will try it next time we have meatloaf.

We’ve used a mini-loaf pan before, but I think the muffin tins might be even better!! We like to be able to freeze some for later, and already have it portioned definitely makes that easier. Not to mention, my husband regularly says, “Everything’s better with bacon!” Looks like a great recipe!!

You are the only other person I’ve heard of, besides me, that ever actually asks for meatloaf for the birthday meal. I love my mom’s meatloaf and I make it as much as I can, which isn’t alot because my husband is like your dad and says he doesn’t really like it but eats seconds and thirds every time. Pretty funny!
