1 week down on my sugar and gluten free diet, and my recipe making juices are flowing.  I am like a painter on a new canvas, inspired.  Therefore I will be featuring some new recipes this week.  Some naturally sugar and gluten free, others are accommodated for those things.  Also, did I mention I’ve lost about 7 lbs, in one week!!!!  Wow is all I can say to that, I can’t believe how much junk I was eating.  I’ve also noticed a boost in my energy.  I don’t have the afternoon sluggish feeling anymore, and that is a great thing.
I know this diet won’t last forever but my goal is to re-train myself for healthier options, to go to the fruits and veggies, to naturally crave those things.  Years ago in college I lost lots of weight and kept it off for years and ate so very well, I didn’t crave junk foods, but healthy foods.  I want to be like that again.  I just have to slowly re-teach my stubborn self.

This week we have planned:Breakfasts:

Scrambled eggs and fresh fruit

Oatmeal with fruit

Fruit smoothies

Dinners:

Grilled Pork chops, Salad and Cauliflower Fritters (recipe to come)

Mexican Posole Stew (recipe to come)

Fish Tacos, salad and black beans

Greek Chicken Casserole, with Greek salad

Spicy Sausage and Cauliflower Soup, with gluten free crackers

Snacks and desserts:

Lime Cornbread Cookies – sugar and gluten free (recipe to come)

  1. You are such an inspiration! I’ve been trying to cut back on our white sugar intake, substituting with honey whenever possible. I’ve tried agave, but it seems a little thin for me. I did like it for tea though. I’m starting the shred again today. My cousin is going to do it with me and we’re going to tweet about it. It’s easier since she lives 45 mins away. Can’t wait to see the results!
