I have some easy meals planned for the week, I’ve been fighting a bit of a chest cold and I would like to take it a bit easy in the cooking department. I do have planned breakfast for dinner, I just love breakfast for dinner and the boys do too.

Shoot! I’m sorry you’re not feeling well Jenna. I actually spent the weekend making a GIANT pot of chicken soup. I ended up with four batches – one for tonight and three more for the freezer for when cold/flu season hits!
Wow…great post and pictures! I would have never tried the pumpkin with the spinach and pasta, but it looks so good I think I will. This is the season for pumpkin…so the pumpkin yumkins will be a nice addition to our muffin day. Both sound like great pumpkin recipes…looking forward to tasting them. Thank you for sharing.

Hope you’re feeling better soon. It’s not fun to take care of little ones when your sick. Hopefully y’all can snuggle in the bed and watch a movie so you can get some rest. Breakfast for dinner is always on our menu on Wednesday nights, I’d eat it every day all day if I could 🙂
The pumpkin sausage penne looks delicious and so appropriate for the season. My favorite meal when I’m sick is always Tex Mex. I just love something cheesy and creamy.
