It’s pumpkin time again in our house, and I am desperately thinking of recipes and new ideas, it’s so bad in fact that I heard there could possibly be a canned pumpkin shortage, so every time I go to the store I pick up at least 4 cans.  Obsessed much??  So far I think I’ve made at least 3 pumpkin recipes this week and have tons more to come.  I am probably going to do another pumpkin roundup soon.

What is your favorite pumpkin recipe?

Last week we enjoyed:

Potato Pancake with Avocado mash and eggs

Texas Soup

Tomatillo Chicken

This week we have planned:

Breakfasts:

Eggs, toast and  fresh fruit

Cereal with berries

Chocolate Pumpkin Oatmeal

Dinners:

Sticky Chicken

Photobucket

Mexican Chicken Stew

Sausage Spinach loaf (recipe to come)

Snacks and desserts:

Pumpkin Blondies (recipe to come)

  4. Here in Northern NY we have a pumpkin shortage! I buy a few cans every time I see some at the store. I have a nice stock on my pantry but I’ll keep picking them up incase friends need some! I LOVE pumpkin season! Couple that with cinnamon and I’m golden! We had pumpkin waffles on Saturday and pumpkin pancakes tonight for dinner! Your pudding looks so yummy!
