It’s Spring Break, well not really for us, since none of us are in or working for a college anymore. But DT will have off several days this week so it will be like a mini break for us, including me and my menu plan, though I do have some fun new meals plan, nothing extravagant.
I feel like I haven’t been blogging much lately, my life has been slightly consumed with chicks (I have 8 now) and I’ve even joined an online chicken lovers forum called Backyardchickens.com. It’s so neat and the people there are wonderful and could answer every little chicken or duck question you could think of. I can feel another chicken post coming soon, please bare with me. You will be amazed at how big the chicks and ducks are, AMAZED!
Ok back to menu planning.
Last week we had:
Dinners:
Sloppy Joe Stuffed potatoes with fresh fruit using this sloppy joe recipe
Barbecue ribs with roasted turnips and carrots
Fish Cakes (recipe to come) with sweet potato fries
Desserts, Snacks and Drinks:
Caramel Croissant Pudding (recipe to come)

The Huevos Rancheros look really good. I have never made them before but I might have to try them now. Thanks for sharing!
I have got to try those mini shepards pie!!
Yum! A friend shared a fish cake recipe with me last night. Can’t wait to see if it’s similar! And I love hearing about your chickies and duckies…and my daughter loves the pictures 🙂
You still manage to blog ten times more than I do with twins, husband, dogs, cats, chickens and ducks along with your own garden! We hope to see ya’ll soon!
I can’t wait to hear your chicken stories! I think it’s actually pretty cute that you love them so much and want to share stories about them. The size of the eggs are amazing…and I’m still boggled over that whole “twin” egg that you posted. I had no idea that chickens could have twins!
I like the looks of the mini shepherd’s pies. What a great idea. Come join me for Crock Pot WEdnesday this week if you can.
OMG, that goulash looks amazing!!! I have always had mine with tomato based sauce. Yum!!
