I have lots of fresh veggies on the menu again this week, which I am sure if no surprise to you if you’ve been following my garden. We leave this Friday for a four day weekend down at the bay and guess what!! I don’t have to plan that menu, yea!! Now I will probably cook here and there, but no menu planning for me, it will be glorious, lots of burgers and steaks and shrimp, yum!

Tuesday: Crock Pot Roast with Potatoes and Carrots (foil trick)
Wednesday: Leftovers
Thursday: Lentil Stew with Squash in the crock pot

I forgot to tell you but the other day i made your yummy chicken spinach enchilada recipe! We LOVED it!
It was so good and I felt pretty healthy eating it….low carb tortillas, fat free cream cheese and lite sour cream. It was low fat, but very very tasty..Thanks!
