Since DT is taking care of his parents animals while they are recovering from their accident, we have tons and tons of eggs!  So he requested I make the egg casserole, and I also made the Angel pie again, this time using leftover limes, and it was yummy!

  1. I wonder if the mushroom and egg casserole could be made by using only the whites of the eggs? and I bet I could substitute meatless sausage for the bacon? (I don’t eat pork and I don’t like meatless bacon.) However, I like the idea of eggs and mushrooms in a casserole. Maybe I’d need a completely different recipe for that?
