I am dieting, ok so it doesn’t feel like dieting…. which is awesome,  but more about that later.

We officially have about 2 weeks until school start for my big boys.  eek…. this summer is flying by.  Luckily I did all my school supplies shopping already, just need to get the boys some new jeans, polos and shoes.  And done.  The littles officially start after the first of September and no uniforms or school supply lists for them, which is very nice.

I’ve been super busy with my photography as sunflowers are blooming and are just gorgeous!!

Here’s what caught my eye this week and what I’m reading.


Last week we enjoyed:
Fig Jam

Mini Meatloaf, sweet potato with salt and pepper and mixed veggies, or side salad

Crock-pot Jambalaya with brown rice and fresh okra from the garden.

Thai Turkey Tacos as lettuce wraps, no tortilla so yummy.

Fish baked in foil with brown rice

White Chili (picture and recipe courtesy of Aunt Nubby’s Kitchen)no cheese, and makes yummy leftovers

Banana Ice Cream– 2 ingredients, frozen banana and cocoa powder, I only eat this on days that I didn’t eat a banana for breakfast.

Pumpkin Protein Cookies

This week we have planned:

Breakfasts:

PB &B roll up, 1-2 tbsp natural peanut butter (no added sugar) 1 whole wheat tortilla and 1 banana.

eggs, whole wheat English muffin, mixed berries

Dinner:

Beef with Broccoli Stir fry

Life Made Simple, Chicken and Hatch Chili Stew

Chicken and Hatch Chile Stew

Smothered Chicken, mushroom and rice Casserole

Snacks, desserts, drinks, other:

Blueberry Galette, but using fresh figs from our tree.

  1. I tried your recipe for the Patty Pan Squash. It was fantastic, we loved it and will eat again as we have a source at a produce stand who can supply us for the summer. People just don’t know what they are missing by not eating this squash and using your recipe.

  2. That’s great, so glad you guys enjoyed it and you have a source for these beauties. Sadly I haven’t had any in a couple years. Guess next year we will need to grow our own again.
