What a beautiful thing to wake up to this morning: Rain!! It’s actually been raining here and there for the past few days, not much but something, but today I awoke to puddles and slightly cooler weather.
I’ve also been a very busy bee testing recipes for the e-cookbook, and can I say my freezer is filling up!! I am sure I will love this in a few months having all those frozen meals. This week is Pumpkin recipes (of course if I am making a cookbook I’ve got to include Pumpkin), and I am super excited to start testing them!!
Last week we enjoyed:
Baked Spaghetti (picture and recipe courtesy of Cooking with Mel)
Easy Chicken Cacciatore in the crockpot (picture and recipe courtesy of Crystal & Co.)
Thin Crust Pizza Dough (picture and recipe courtesy of The papercup Kitchen)
This week we have planned:
Breakfasts:
Cereal with fresh fruit
Scrambled eggs, bacon, biscuits and fresh fruit
Smoothies
Dinner:
Crock Pot Shredded Beef Burritos (recipe and picture courtesy of An affair from the heart)
Snacks, desserts, drinks, other:
Skinny Pumpkin Cupcakes with Pumpkin Spiced Cream Cheese Icing (recipe and picture courtesy of Gina’s Skinny Recipes)

Looks great! Congrats on the ebook! Wow! Can’t imagine being able to do that with twin little boys running around! I can barely keep up with my 1 yo and 3 yo boys! 🙂
I posted a menu plan today too, but it’s not as detailed as yours.
Those cupcakes look AMAZING.
I love Skinny Taste. She’s got some real winners on that site (recipes of course!) How’s the cookbook coming along? I wonder if my hubby would go for Moussaka? He’s not a big eggplant eater anyway, but I love it!
Thank you for including my recipe in your meal plan!! Please let me know what you think! 🙂
Your menu looks great, I will testing my recipe this week or next!
