Our garden is overflowing with wonderful veggies, so as always I am making some new and old favorite recipes. I am going to be really busy in the kitchen this week. I prefer to eat my veggies fresh, but if I must, I do resort to freezing; tomatoes and shredded zucchini are two that freeze well. My mom has been shredding zucchini in everything, meatloaf, spaghetti, etc. It’s an easy way to add a veggie to your meal and picky eaters will never notice.
Here’s some of our lovely garden produce.
Can’t beat garden fresh tomatoes, my absolute favorite.
How about some zucchini and yellow squash, cucumbers, purple cabbage, green beans, okra, bell pepper, jalapenos.

Your garden is amazing! Haylei just pulled a little pinkish green tomato off the bush yesterday. I’m going to try my hand at refrigerator pickles this year. We really love Mt. Olive brand pickles so I’m hoping to figure out how to make them taste like that!
