I am really enjoying this Holiday Treats week, sadly I’ve sent all the goodies away with DT on the road. So I am left to blog about the yummy goodness but can’t enjoy them whilst I I try to write all about it, I need inspiration people!!

Up today is Pecan Brittle. A super easy quick and yummy way to cook the brittle in the microwave. This recipe is originally for peanut brittle but I didn’t have any so pecans it became. I think I like it with pecans better anyway. I always forget how much I like brittle until I eat it, and it surprises me with it crunchy nutty goodness. But my really favorite way to eat it is when its a few days old and has become soft and chewy.
Ingredients: 1 cup chopped pecans, 1 cup sugar, 1/2 cup corn syrup, 1/8 tsp salt, 1 tsp butter, 1 tsp vanilla, 1 tsp baking soda
In a large 8 cup microwaveable dish, mix the sugar
corn syrup
and salt
Then place in the microwave for 4 minutes
While it is cooking, go ahead and butter a flexible cookie sheet
Then pull out the sugar mixture and stir well
Then add in the chopped pecans, stir well and cook another 3 minutes
*note if using raw peanuts add them in the very beginning they need to cook longer
The mixture will be slightly brown and very bubbly, add in the butter and vanilla, and stir until melted
Then microwave for 1 more minute, the mixture will be extremely hot.
then add in the baking soda, and gently stir
until the mixture is light and foamy
then quickly pour onto the cookie sheet and spread mixture out thinly
it will set up very quickly, wait about 15-20 minutes to cool
then break into chunks and enjoy!
Then place on your new cute *holiday themed plates
*you might have noticed a theme, my mom (thanks mom) gave me these adorable holiday plates and I’ve used them for the triple chocolate cookies and chocolate peanut butter fudge holiday treats.
and watch them disappear!

In a 8 cup microwavable dish stir together sugar, syrup, and salt. Place in microwave and cook for 4 minutes. Then stir and add chopped pecans and microwave for another 3 minutes. Then add butter and vanilla to syrup, blending well. Return to microwave and cook 1 minute more. Pecans will be lightly brown and syrup very hot. Then add baking soda and gently stir until light and foamy. Pour and spread mixture quickly onto lightly greased cookie sheet; let cool for 1/2 hour. Then break into pieces.
*note if using raw peanuts, add them at the very beginning with the sugar.

I love brittle. And honestly, pecan brittle sounds way more festive than peanut brittle. Delicious!
