In honor of Cinco de Mayo and fabulous Mexican food, I thought I would share some of my favorite Mexican recipes.
Guava Pastelillos (Guava Cheese Turnovers)- run to the store and buy some guava paste now, you won’t be sorry.
Enchilada de Pollo y queso, aka Cheesy Chicken Enchiladas- these have the best flavor of any enchilada I’ve ever tasted.

Jalapeno Margarita– what’s a party without a little sweet heat, these are a must try.
Or how about a refreshing little Tex Mex Margaritas, the Texas-tini.
Fish Tacos with Lemon Butter Sauce, inspired by my favorite restaurant Los Cucos.
Caldo de Pollo aka Chicken Soup, simple delicious and so very satisfying.
Seeing your roundup of fav Mexican foods for Cinco de Mayo makes me wish I put something together for it. I LOVE the guava pastelillos and the cheesy chicken enchiladas. Just give me some spicy beef empanadas, guacamole, and that jalapeno margarita, and I’m good to go. It was a wonderfully spicy day, wasn’t it?
Gotta say, the Pioneer Woman’s enchiladas (with red sauce) are to DIE for. Will not make any other enchilada recipe. But my favorite is my chicken tortilla soup, especially on a cold, rainy day.
