One of my all time favorite go to meals. Goulash, not the prettiest name but always a yummy easy and healthy meal to throw together quickly. I almost always have the ingredients on hand for Goulash. The great thing about this meal is you can use what you have or sub with something you don’t. I always use whatever ground meat I have, fresh veggies, and pasta.
Ingredients: 1 lb ground meat, 1 onion, 2-3 garlic cloves, 1 can rotel, 1 can cream of mushroom, 2 zucchini, 1/2 head of cabbage, 1/3 stick of Velveeta, 12 oz pasta, 1 T paprika, salt and pepper to taste
Start off with browning meat, salt and pepper to taste
Add onion and garlic
Chop zucchini and cabbage
Add veggies and mix well
add can of rotel and cream of mushroom
Then using can add water till veggies are slightly covered
Add noodles and mix well- pressing noodles into water
Cook on med-high heat until veggies and noodles are cooked
Then lower heat to low and add cubed cheese and 1 T paprika, stir until melted

2 small zucchini
1/2 head cabbage
12 oz noodles
1/3 stick of Velveeta
1 T paprika
salt and pepper to taste
Start with a large stock pot on high, brown meat, salt and pepper to taste and then add onions and garlic, cook until softened. Add chopped zucchini and cabbage cook for a few minutes till slightly wilted. Add can of rotel and cream of mushroom, then add water until veggies are covered and add noodles pushing them into the water, stirring well. Cook for about 10-15 minutes till noodles and veggies are cooked. Add cubed cheese and paprika, stir until melted.

This is a lot different than the goulash I make, but I think it looks great. I am going to have to try it.
What an interesting and flexible recipe! I’m going to try this next time I’m out of ideas. Hey, I think I can start with tonight’s dinner, because I’m already out of ideas. I’m having Sweet Potato and Pumpkin soup for lunch, but that’s all I’ve got planned.

I’m totally going to make this but substitute stew meat for the ground. I wonder if there’s another soup I can use in place of cream/mushroom. Maybe potato! ?? Mushrooms make me gag, lol.
