For DT’s birthday last week I wanted to shake things up a bit, make something familiar, but yet slightly different. I am crazy like that, ha ha. Any-who, I came across this recipe somewhere on the internet, and with DT’s 2nd favorite cake being German chocolate, I figured it would be perfect. In case you’re wondering, this is his first favorite cake. This cake was delicious, moist, chocolaty and, best of all, you don’t have to make icing. It’s built right into the cake, yum!!
Oh, and it also starts off with a cake mix, so it couldn’t be simpler.
Ingredients: 1/2 stick butter, 1 cup chopped pecans, 1 cup coconut, 1 German chocolate cake mix + ingredients to make the cake according to the directions, 8 ounces cream cheese, softened, 1 lb. powdered sugar
Coat a 13 x 9 pan with butter, and then place into 350° oven to melt the remaining butter.
Then chop your pecans.
Mix up your cake batter with the eggs, oil and water.
Once the butter has melted,
sprinkle in a even layer of chopped pecans,
and shredded coconut
Then pour cake mix on top,
In your mixer, add the cream cheese and powdered sugar.
beat until sugar is fully incorporated and it becomes thick and creamy.
Then carefully dollop the cream cheese over the cake, so each piece will have some icing.
Bake at 350° for 45-50 minutes.
Then cool, cut and flip upside down. So that the pecans and coconut are on top.
Serve with ice cream, if you so desire. In my family it’s always cake AND ice cream.
DT always has plenty of helpers to blow out his candles and help him eat his cake too.

1/2 stick butter

1 lb. powdered sugar
Melt butter in bottom of the 9 x 13 pan.
Sprinkle the pecans and coconut on top of the melted butter.
Mix the German chocolate cake mix according to the package directions. Pour the batter over the coconut and pecans in the pan.
Stir the cream cheese and powdered sugar together. Dollop onto the cake mix evenly so that each piece will have some. Bake at 350 degrees for 45- 50 minutes.
To serve, cut it out and turn each piece upside down on the plate.
