DT has been working hard lately and hasn’t been home much so when he is I like to treat him and make something fried. Good ole fashioned fried foods are his favorite.
This is my take on fish cakes using fresh fish. It has such a great flavor with the fresh bites of fish, bell pepper and yummy hint of tomato. I paired it with simple and easy sweet potato chips. This is an easy to make, man loving meal!
Ingredients: 1 1/2 cups raw fish, diced fine, 1/4 large green pepper, diced, 1/4 large onion diced, 1 1/2 sleeves saltine crackers, crushed, 1 tsp thyme (1 T fresh), 2 T butter, 8 oz tomato sauce, 2 T tomato paste, 2 eggs, slightly beaten, 1 tsp salt, 1/2 tsp black pepper
To start dice the fresh fish, I used tilapia for this, but cod, catfish, or any other white fish would be excellent also.
Finely dice the bell pepper
and onion
and add to a large bowl with the fish
then add in 2 T room temp butter
2 eggs
the tomato sauce and paste
next crush some saltines in the sleeve, just give it a few whacks with something hard and add it in.
Then add the dried thyme
salt
and pepper and mix really well.
Then in a large skillet, about about 1/2 inch of oil and heat on high. Test the heat of the oil with a small piece of the batter and if it sizzles right away its hot enough.
Go ahead and form into patties and add to the hot oil.
Cook on for about 2 -3 minutes and then flip
Beware of hungry men, the smell will bring them running to the kitchen!
So its always nice to have a little to snack for them luckily before hand, I made sweet potato fries.
I simply wash the sweet potatoes well, then cut them into thin slices, if you have a mandolin this would be perfect. I don’t so I just cut with a knife.
then fry them in hot oil for about 1-2 minutes, depending on the thickness of the slice, just eye ball it.
Then place on paper towels to drain, sprinkle with a little salt and enjoy!
Meanwhile back to the fish cakes, once you have flipped it cook another 2-3 minutes until golden brown, and then place on paper towels to cool and drain any excess oil.
Serve with your favorites dipping sauces, we love tarter sauce and ketchup!

I love how you said “man loving meal”!!! Totally cracked me up but I know exactly what you mean. You want to feed them something to make them happy 🙂 It sounds really good, I don’t think I’ve ever thought about using fresh fish for fish cakes. Great job! What kind of fish did you use? I can’t stand a “fishy” taste, so I’m wondering if catfish or talapia will work.
