If you have a major chocolate craving and love dark chocolate. I have the recipe for you.
I love chocolate and since I am nursing I have been craving it more than usual. These are so sinfully rich, satisfying, and gooey. Did I mention gooey!!
I could look at this picture all day.
Just go make them, you know you want too!!
Ingredients: 1-1/3 cups sugar, 1/2 cup vegetable oil, 3 large eggs, 4 teaspoons vanilla, 1-1/3 cups flour, 1/2 cup dark cocoa powder, 1/4 teaspoon salt
Cut parchment paper to fit your baking dish. Pre-heat oven to 350°.
In a mixing bowl add vegetable oil and sugar, combining well.
Add eggs and vanilla, mixing well.
In a separate bowl add flour, salt, and dark cocoa powder.
Add dry ingredients to wet
Mix until just combined, don’t over mix.
Pour into baking dish and bake for about 20 minutes, checking with toothpick.
My sweet helper H said, “Hey mom take a picture of me with bacon!” Yep, he loves bacon!
While the brownies are baking start on the ganache.
Ingredients: 1/4 cup honey, 2 tablespoons sugar, 1-1/2 tablespoons refined coconut oil, 1/2 teaspoon vanilla, 1/4 cup cocoa powder, 3 tablespoons creamy peanut butter, 4 tablespoons plain Greek yogurt
In a small saucepan on low heat, add honey, coconut oil, and sugar. Cook until honey has melted. Coconut oil will still be separated from honey.
Then add in the cocoa powder and vanilla.
Stir until smooth. Remove from heat and set aside.
Once brownies have baked, set aside to cool.
Mix peanut butter and greek yogurt into warm ganache.
Then pour on the still warm brownies.
Let cool completely before eating, if you can wait.

1 1/3 cups sugar
1/2 cup vegetable oil

1/4 cup honey
2 T sugar
1 1/2 tablespoons refined coconut oil
1/2 teaspoon vanilla
1/4 cup cocoa powder
3 tablespoons creamy peanut butter
4 tablespoons plain Greek yogurtPreheat the oven to 350°F. Set aside a parchment paper covered 8″ x 8″ pan.
In a large bowl, stir the sugar and oil together.
Stir in the eggs and vanilla until completely combined.
Add in the flour, cocoa powder and salt until just combined. Be sure not to over stir.
Pour into the prepared pan and bake for 20-23 minutes. Test for doneness with a toothpick.
Meanwhile, in a sauce pan over low heat, stir the honey, coconut oil and sugar until the honey is dissolved, but it still will be separated from the oil. Stir in the vanilla and cocoa powder. Remove from the heat and let sit on the counter for at least 5 minutes, while the brownies cool. Stir in the peanut butter and greek yogurt and pour over the brownies.
