I need your help in some cooking inspiration here, coming up blank. Any ideas thoughts, suggestions.
Anyone want to come cook for me, and I’ll sit back and take pictures and pig out? I up for all kinds of offers!

Sweet and Sour Chicken
4 boneless skinless chicken breasts
1 jar of apricot preserves
1 bottle of Catalina dressing
1 packet of dry onion soup mix
Mix together and bake for 45 minutes on 325.
OOOOOOOOOOOOR my Roast
Lean cut of roast
2 can of beef consumme
1 can of beefy mushroom
1 packet of dry onion soup mix
Mix all together, crock pot on low all day.
I did a great tuna pasta salad this week:-)

I have some Zucchini that my mom grew that I am going to grate up for Zucchini Bread…as soon as I manage to find that darned recipe…

Cheesy Stuffed Chicken Meatballs in Marinara Sauce

Ingredients•1 pound spaghetti
•1 tablespoon extra virgin olive oil (EVOO)
•3 cloves garlic, grated or finely chopped, divided
•1 can plum tomatoes (28 ounces), crushed with your hands or back of a wooden spoon
•1 can crushed tomatoes (15 ounces)
•1 pound ground all-white meat chicken
•1 egg
•2 tablespoons milk
•1/2 cup bread crumbs (a couple of generous handfuls)
•3/4 cup grated Parmigiano Reggiano cheese (a couple of handfuls)
•2 tablespoons flat leaf parsley, chopped
•Salt and freshly ground black pepper
•1 piece mozzarella cheese (about 4 ounces), cut into 1/2-inch chunks
•10 leaves of fresh basil, chopped
PreparationBring a large pot of water to a boil over high heat. Once the water comes to a boil, add a generous handful of salt along with the pasta. Cook the pasta to al dente, according to the package directions.
Place a medium size sauce pan over medium-high heat. Add EVOO, about one turn of the pan. Add half of the garlic and cook until it starts to get lightly browned, about one minute. Add the tomatoes and bring to a simmer; cook for 8-10 minutes and season with salt and pepper.
While sauce is simmering, place the ground chicken in a medium size mixing bowl and add the egg, milk, bread crumbs, 1/2 cup of grated cheese, the other half of the garlic and the parsley.
Season the chicken mixture with salt and pepper. Mix all ingredients together and roll into 12 medium-size meatballs, each about two inches round.
Place a piece of cheese into the center of each meatball and maneuver the meat around the cheese to seal it in the middle. Place the meatballs in the tomato sauce and simmer for about 10 minutes, or until cooked through.
Pour meatballs and sauce over the cooked pasta. Sprinkle with the remaining grated cheese and basil and serve.

I’ve always wanted to try making my own pasta at home, but have never gotten around to finding a recipe or trying it. If you had any interest, I’d love a step-by-step demo…
I also am always looking for healthy type all-in-one dishes that I can eat for a quick lunch in the summer. Something with vegetables, whole grains, and protein in it. I feel like my recipe box doesn’t have very many of these in it.
I recently tried a plum tatin cake from Barefoot Contessa since plums are in season up here in the midwest. It did not come out so good. I am wondering what I did wrong…I’m not much of a baker.
Hope you are getting some good ideas flowing.
PS – Cherries are in season up here too and I want to do something with cherries and chocolate. Do you think I could put chocolate in a cherry pie?
I have a chicken fried chicken recipe on my blog that is super easy and super yummy. It’s always a crowd pleaser.
We’re enjoying zucchini recipes. Stuffed zucchini (with Italian sausage stuffed into whole zucchinis) covered in marinara sauce, breaded – pan fried zucchini slices, cheddar zucchini soup (use your basic cheddar broccoli soup and add shredded zucchini instead, an then chunk up one small zucchini for the right texture) in a bread bowl, zucchini chunks tossed into our enchilada fillings, zucchini fritatta, and of course zucchini chocolate fudge cake. There are 7 of us, so we keep a huge garden, and even have enough for our garden stand out in front of our home on a historic main street in Upstate New York.

Hmmm.. well I love a choc chip, almond and cinnamon friands. It’s really easy and a great way to use up egg yolks from custard or icecream. Check out my Portuguese custard tarts too. 🙂 (They’re both on the recipe page).
