I was lucky to receive 1 meal a week (for 7 weeks) from my lovely sorority sisters after the babies were born. And my sister Monika brought this lovely casserole over for dinner one night. We devoured it. I quickly asked for the recipe as DT and the bigs loved it.
It was so good and simple to make too. It’s one of those recipes that you can throw together with the ingredients you have on hand.
I also love the fact that there are eggs in this recipe, a great way to get in extra protein and use my ever abundant eggs.
*I made double the recipe in these pictures, one for now and one to go in the freezer or share with a friend.
Ingredients: Boil one whole chicken or 6-8 chicken thighs, bone-in, or 4 boneless chicken breasts; 1 can cream of mushroom soup;
4 hard-boiled eggs; 2 cans vegetables or 1 bag mixed frozen veggies (1 can of green beans, 1 can corn and carrots or whatever you have in the pantry!); 3 cups of chicken broth (use water from boiled chicken)
Boil the chicken for about 30-45 minutes until fully cooked. Remove chicken and save broth.
Remove the chicken from the bones, set aside.
Chop boiled eggs.
In a large mixing bowl, add chicken, cream of mushroom soup, eggs, vegetables and mix together.
Pour in the casserole and add the topping. To make topping melt 1 stick of butter, add flour, milk, salt and pepper to taste. Mix thoroughly and pour over veggie mix.
Bake in oven at 450º for about 30 minutes until topping is golden brown.
Serve with a side salad.
You might as well double the recipe and make another, you will thank yourself later.

If you are going to freeze, do you bake first? If you don’t bake first, do you still put the topping on it before freezing. Sorry, I want to make this and give one to a neighbor to bake later. I assume that it should be thawed before baking? Thank you.
