With the cold weather we are finally having, and after eating sooo much turkey, gobble gobble. I was craving a warm comforting soup. What could be better than soup on a cold day? At least nothing to me.
I am a huge soup fan, thick, thin, brothy, veggie, I love them all. This is on tops of the list. The creamy potato and cheese combination is to die for, and so easy to make. I hope you enjoy this recipe as much as I have.
ingredients:1lb ground beef, 1 onion chopped onion, 1 teaspoon dried basil, 1 teaspoon dried parsley, 4 tablespoons butter, 3 cups chicken broth, 4 cups cubed potatoes (5-6 medium potatoes), 1/4 cup all-purpose flour, 2 cups cubed Velveeta, 1 cups milk, 1/2 cup heavy cream 1/4 cup sour cream
I used medium size red potatoes and left the skins on them, and cut them to similar size
Brown the meat in a large stock pot
Remove meat from pot and add 1 T of butter, chopped onion
1 T basil, and 1 T parsley
Cook until slightly softened
Add chicken broth to deglaze the pan, whisk to help lift drippings
Add potatoes and bring to a boil cook until potatoes are fork tender, about 8-10 minutes
While potatoes are cooking, melt 3T butter in small skillet and add 1/4 cup flour, whisk and cook until bubbly
Once potatoes are cooked add cooked beef and pour in flour mixture, stir very well
Add cheese and simmer until melted
Then add milk and cream, the original recipe calls for 1 1/2 cups milk, but I wanted to add the extra creaminess with heavy cream, yum yum
Add black pepper, and salt to taste
Right before serving add 1/2 cup sour cream

I don’t use the heavy cream or Velvetta. Instead I use 1 c. milk, 2 c. shredded co-jack and 1 can of green chilies. It tastes even better the next day…yummo!
