On my first day of my new sugar free and gluten free (sf & gf) diet I decided to bake a cobbler. I had just purchase gluten free flour and agave which is a natural sweetener. Mind you  I have never made sf or gf dessert in my life, but I was determined and thought I could pull it off. So I halved my recipe for Cobbler and changed the ingredients a bit.  It was really easy and so fun to play around and create this recipe.  But the best part is that DT and I both really loved the result.

The cobbler had a wonderful nutty full flavor and the berries really stood out.  We didn’t miss the sugar or flour at all.  In fact in DT’s exact words were (he’s been a bit reluctant about this diet) “If this is how were going to eat I can do this every day”.  I was very happy with the result and my first day of sugar and gluten free eating.

Let me show you how simple this recipe is.

Ingredients: 1/2 stick butter, 1/2 cup gluten free all purpose baking flour (I used Bob’s Red Mill), 4 T agave nectar, 1 tsp. baking powder, 1/2 cup  milk, 2 cups berries

For my gluten free flour I used Bob’s Red Mill which contains garbanzo flour, potato starch, tapioca flour, sorghum flour, and fava flour.

and OhGave! Blue Agave which is slightly sweet with the texture of honey, its really good.

First off melt 1/2 a stick of butter in your pie plate

Isn’t this pie plate beautiful?  I got it from a etsy seller, it just spoke to me!

It’s very beautiful and well made.

So melt your butter I just popped it in the microwave for a 30 seconds.

Then in a small bowl, add your flour

and baking soda, mix well

then add in your wet ingredients, milk

and agave nectar

mix well

then immediately pour on top of your melted butter as the flour mixture will start to bubble.

then toss in your berries, I choose these gorgeous blackberries

spread them out evenly and bake at 325 for about 30 minutes, or until golden brown

Then control yourself.

Oh who am I kidding, just dig in!

Super Easy Cobbler

1/2 stick butter

1/2 cup gluten free all purpose baking flour (I used Bob’s Red Mill)

4 T agave nectar

1 tsp. baking powder

1/2 cup  milk

2 cups berries

Mix flour and baking powder; then add milk and agave. Melt butter and pour in pie plate add flour mixture on top.  Pile the fruit on top and bake at 325 for about 30 minutes or until golden brown on top.  This is good with any fruit.  Will rise while baking. If wanting a little extra sweetness drizzle on some agave or honey.

  8. I’ve made this twice & really liked the way it turned out! My family loved it too. Way to go, being your first day GF! I used my own combo of GF flour & used rice milk, maple syrup and added some vanilla. Thanks for making it simple!

  9. I tried this a few weeks ago with peaches and took it to family dinner. Even my non-gf family loved it! Today I’m going to make it with frozen cherries. LOVE the idea of putting the batter on top of the melted butter!

  12. My mom made blackberry cobbler when I was a kid. We went out and picked our own berries and she canned/preserved. She would take a deep pyrex dish and make a blackberry cobbler that we all gobbled up. I’ve been missing it and I think this recipe looks so easy so I pinned it on Pinterest and will be making it soon. Thanks!

  13. @Robin, Robin, if your wanting to make it none gluten/sugar free, use 1/2 cup regular all purpose flour and 1/3 cup white sugar. Hope you guys enjoy the recipe. Sounds like great family memories.

  14. One of very favorites in all the world. We used to go out and pick our own berries and bring them back and Mama would make a cobbler that looked very much like this. I cannot wait to try it. Too old and scared (snakes) to go berry picking anymore but there’s some at the store and I definitely will make this. Thanks.

In the ingredients list you list baking powder but in the directions (with pictures) you say to add baking soda – curious as to which one it is. I hope baking powder because that’s what I used! Thanks!

  17. Much to my surprise I really enjoyed this gluten free and sugar free cobbler. In fact you could tell no difference between this one and a regular one. I am a big foodie and a baker, so my compliments to the creator of this recipe.

  19. This looks so good! Always to find good recipes. I’m going to try this with coconut nectar since there is much debate on agave being highter than corn syrup as far as fructose goes.

  20. I just made this but with a dash of stevia to the flour mix and no agave. I used 1/4 cup sorghum flour, 1/4 cup tapioca and 1/8th tsp xanthan gum for the flour mix. I spread it out into a rather large glass pan, I think its a 9 by 9 inch or something, and I think I added more like 2 and a half cups of blackberries so it didnt seem like there was going to be enough dough to cover it all and I ended up mashing the berries into it till the dough was even and purple. I also decided to bake it for an extra 15 mins cuz it was looking uncooked at the bottom. I just had a bite and it has come out great, but I do think it would have been better if I didnt mash the berries!!

  21. Fantastic recipe, really helpful to someone new to the GF/SF diet. One note however is I used stevia in place of the agave; if you do a little research it turns out agave syrup is actually quite a bit worse than high-fructose corn syrup, they just had better marketing. Hope that helps 🙂

  22. I’ll 2nd the agave bust…they process it so its just as bad as HFCS. Boo..sugar free for me is stevia only. This is an awesome recipe btw. Thank U. My tweaks were: bobs red mill baking and biscuit flour (blue label) ,vanilla hemp milk (unsweetened) a dash of Celtic sea salt, and 3 dropper full of vanilla liquid stevia. I wish I quadrupled the recipe it was delish! Can’t wait to try with blueberries.

  23. I love the ease of the recipe, but it was kind of thick and I wasn’t sure what to do the oil didn’t want to mix with flour and milk. I did put it in the oven I’ll see what’s going to happen thanks again
