Have you seen the craze on Pinterest for  Apple Nachos?  Well I sure did and I took heart.  I love a twist on the old classic apples and peanut butter.   I made these over the weekend and they were gone like hot cakes,  and I will say I ate a bunch of them, and, do I feel guilty?  Not at all, because 1 whole large apple topped with all these delicious goodies is only about 300 calories.  Let me just tell you, if you could eat all of that I can commend you, because I tried and couldn’t!

I love these kinds of snacks. Snacks that taste so good, are good for you, and make you feel like you’re eating dessert.  Not only that, but the men in my life gobbled these up, too.  DT was less than thrilled to try, but once he tasted them I had to make more, they are so good.   Kinda like a caramel apple, meets smores with a crunch.

Ingredients: 2 apples, shredded coconut, almonds, marshmallows, caramel bits, chocolate chips, peanut butter, nutella

I used Braeburn apples, but Honeycrisp, Fiji, Gala, or your favorite apple will do just fine.

Slice very thin and remove seeds.

the toppings can also vary to whatever you like, these are a few of my favorites.

I lined these on my toaster oven tray covered with foil.

Sprinkled on plenty of goodies.  About 1-2 Tablespoons of each.

And toasted in my toaster oven for about 2-3 minutes.   If you don’t have a toaster oven the oven on broil should work, just watch closely.

Just enough to make everything melted, and gooey.

On the next batch I drizzled peanut butter that I heated.  I bet Nutella would be awesome too.

These had peanut butter, shredded coconut, almonds, caramel bits, chocolate chips and marshmallows.

They are so simple and so good.  My boys loved them and thought that I was the coolest mom ever.

Apple Nachos

Apple (Braeburn, gala, figi, honeycrisp) or your favorite kinds

Toppings:
Shredded coconut
almonds
marshmallows
caramel bits
chocolate chips
peanut butter
nutella
your favorites the sky’s the limit.

Slice apple thin, remove seeds. Add toppings of your choice. Place on toaster over rack or baking sheet.  Toast in toaster oven until melted, or broil in oven until melted about 2-3 minutes.  Serve warm and gooey.

  4. What I like about this recipe is the ability to plate and stage the apples and the coverings in the refrigerator. As company arrives the smell will be intoxicating!

  6. I’m going to try it with some twist. First I’m going to use candied walnut bits. I use them on salads, and they are awesome. Next, I’m going to drizzle Marshmallow Fluff (not cream), it’s specially air whipped which should work nicely. Last, I’m going to sprinkle it all with Li hing mui powder, to give it a bite. If anyone tries this, let me know what you think.
