It’s time to get back into menu planning after my extended break from blogging.  I am physically feeling much better and like eating and cooking again so that’s a good thing.  If the past two weeks have taught me anything it that life is fragile and to appreciate it more.  I just assumed I would have a normal healthy pregnancy and my Pop-po would live forever, and when that didn’t happen it was devastating.    I will try to make the most of everyday and strive to be more like my Pop-po each day too.

This week we have planned:

Breakfasts:

Scrambled eggs, toast, fresh fruit

Blueberry Muffins

Dinners:

Photobucket

Creamy Spinach and Chicken Enchiladas with homemade Mexican rice (recipe to come)

Photobucket

Zucchini Quesadillas (with zucchini from the garden)

Photobucket

Snacks and desserts:

Angel Pie (for Easter)

  1. Praying for you! My grandma had a stroke as we were driving to Houston to get my DNC, she died 3 weeks later. I honestly think God listened to my urgent prayer that she couldn’t die that same day becauase I could only deal with so much. If you need someone to talk to give me a holler!!

I think we may come eat at your house, you food looks fabulous.

  2. Hi. I’m stopping by from MPM. I am so sorry to hear of your losses. Life can change instantly… I hope you have good week, and find encouragement in Easter this weekend.

  3. Oh no, Jenna! I’m so sorry about losing your Pop-po…I could tell by your posts how much you loved him and how much he loved and appreciated his family.

Your menu looks delicious, as always.

  4. I’m happy to see you blogging again. One day at a time. My favorite scripture is Psalm 34:18. I’m not sure if you’re a Bible reader, but it brings me a lot of comfort. I lost my dear Granny the day before we found out Haylei was a girl. It’s been a little over 5 years and I still miss her.
