Many moons ago I received this recipe from one of my favorite reader’s Emily, who also happens to be a great friend to my Aunt Sue-Sue.  She said this is a family recipe and it was so different then anything I’ve tried recently I just had to make it.

It has sausage in it so immediately I knew DT and the boys would love it, I would love the bread and spinach and cheese, but all together it so very yummy.  And it makes you feel like a fancy bread baker making these, nothing beats the smell of bread baking in the oven, unless you couple that with sausage, cheese and spinach, yum!

Run out an buy Rhodes frozen bread dough (I found it at Walmart), and make this tonight, you won’t be sorry.  Thanks Emily for sharing this new family favorite!

Ingredients: 1 loaf Rhodes frozen bread dough, 1 # bulk sausage, 1 package frozen chopped spinach, thawed, 1 C mozzarella cheese, shredded, 1 C cheddar cheese, shredded, sprinkle of red pepper flakes (optional)

The morning of the day your going to cook the loaf, pull out the frozen dough and set it in a bowl on the counter and cover with a towel to defrost and double in size, until your ready for it that night.

Then remove the sausage from the casings, or you can use bulk sausage.

and break into little pieces.

Cook thoroughly, drain and set aside.

Defrost the frozen spinach, and place in a thin dish towel,

and wring out all of the excess water, there’s a lot!

Spray a large work surface with pam,

and then roll out the dough into a large rectangle about 11×15.

Sprinkle on both kinds of cheese.

Spoon on the sausage,

and spinach.

Sprinkle on a little crushed red pepper for a little kick, totally optional.

Then fold over both sides

and roll up the ends, transfer to a large baking sheet.

Then sprinkle on garlic powder and Parmesan cheese.

Bake for about 30 minutes, until golden brown.

and the cheese is all deliciously melt-y.

Slice and serve, Immediately.

Trust me everyone will be running to try this, it smells so amazing.

1 loaf Rhodes frozen bread dough

1 # bulk sausage

1 package frozen chopped spinach, thawed

1 C mozzarella cheese, shredded

1 C cheddar cheese, shredded

Thaw bread dough early in day, until doubled in size. (I usually put mine in a bowl on the counter at 8:00 am and roll it out about 4:00 pm).  Brown the sausage and drain.    Spray counter with Pam and roll thawed, risen bread dough out into an 11 x 15 rectangle or as close as you can get it.  Put both cheeses on the dough to about an inch from each edge.  Spoon sausage down the center of the dough, drain and squeeze the spinach and place down the center of the sausage.  Fold each side in to the center and seal, then roll ends up and seal.  Turn onto a greased cookie sheet and spread/spray lightly with olive oil.  Sprinkle garlic powder, garlic salt and parmesan cheese lightly over the top and bake at 350 until golden brown (about 30 minutes).  Let rest for 5 minutes and slice like French bread.

  2. My 17 year old just loves when I make this recipe. But I use breakfast sausage like Jimmy Dean’s. I use fresh spinach and just wash it, spin it and put it on top of the meat. When you bake the bread it cooks the spinach. It is easier than pressing all that water out of the defrosted spinach.
