One of my favorite super quick, easy 5 ingredients recipes is a crock pot roast with potatoes and carrots.  Every time I make this my family the boys included just gobble this up like its the best thing they’ve ever had, and I am a super hero for knowing how to make something so delicious.  What can I say I have 3 meat and potato kind of guys so they love, love, love meals like this.  And what the hey, I love making these because it is so easy and good.

I came across this really neat trick from Lynn @ Kitchen Adventures, and I knew I had to try it.  She uses a foil packet to separate the potatoes and carrots from the roast, so they don’t get over cooked and mushy or greasy from the cooked roast drippings.  More details below.

Ingredients: 3-4 lbs Roast, 1/2 cup Jalapeno Jelly (or any type of jelly), 1 Packet Onion Soup Mix, 4-5 potatoes, peeled and cubed, and 1/2 bag baby carrots

Peel and cube potatoes

Place on 2 large sheets of foil and add carrots, salt and pepper

Then fold foil up and then down

Then the sides up and seal tightly

Place roast into crock pot, and pour 1/2 cup jalapeno jelly (you can use sweet & sour sauce, or any jelly), and onion soup mix.

Rub mixture into every nook and cranny of the roast.

Then place foil packet on top of roast and set crock pot on high for 4-6 hours, or low for 6-8

The roast will put off lots of excellent juice be sure to pour some on top of the veggies

Crock-pot Roasts with Potatoes and Carrots

3-4 lbs Roast

1/2 cup Jalapeno Jelly (or any type of jelly)

1 Packet Onion Soup Mix

4-5 potatoes, peeled and cubed

1/2 bag baby carrots

Take roast  frozen or thawed, place into crock pot.  Pour on 1/2 cup of jalapeno jelly, then pour on top the onion soup packet, rub into jelly and all over roast.  Peel, and cube potatoes, place on 2 large sheets of foil, then pour on top 1/2 bag baby carrots, salt & pepper to taste.  Seal up foil and place on top of roast.  Turn crock pot on high for 4-6 hours or low for 6-8 hours.   Remove from crock pot and pour some of the roast dripping onto potatoes and carrots.  Enjoy.

  1. You can make this meal even cheaper by making your own onion soup mix. I have used that for a couple of years now. It works really well.

  3. The foil is such a genius idea!! The main reason my kids don’t like pot roast is b/c the carrrots and the potatoes are always like mush. I’ll definitely have to try this!! Thanks for sharing that tip!

  5. I cook my roast like you in the crock pot. My recipe is even more simple. My guys like noodles, rice or mashed potatoes with this.

    Season roast with salt and pepper. Slice a nice large yellow onion and put into bottom of pot. Put roast on top of that. Then cover with 2 cans of cream of mushroom soup or 1 large family size can. Cook for 6-8 hours on low. You will have a wonderful roast with lots of gravy for noodles, rice, or the potatoes.

  6. Thanks for telling us about the foil. My husband and I have not been able to get a good roast made in our married life of 9 years!! We both grew up with moms that cooked fabulous roasts! But ours never work! We will try this!

  8. Clever idea to foil the potatoes & carrots. My kids aren’t fond of the mushed-together effect (though I rather like the influence of the meat juice on the veggies). Maybe they’d give it a go if I keep them apart?

    Just went to the grocery, but didn’t buy any roast. Now I regret it! You’ve got me salivating for good home cookin’!

I am making my pot roast right now and i look up how to make it and came across yours so i went to store and got the jelly and soup mix and wraped the potatos and carrots in foil.. Sounds really good i’ll let you know how it turned out it’s for dinner tonight. I can’t wait to try it.
