Shrimp Linguine
Anyone loving Tik Toks? I know I am a bit too much. But this recipe came from a great tiktok-er @msba3. When I saw it I just had to make it, I loved the combo idea of lemon, tomato paste and cream. I have made it twice now and H my 13 year old said it’s his now favorite recipe I make. Now if that isn’t a good review I don’t know what is.
Ingredient list:
3 T Butter, 1/2 onion, 2-3 cloves garlic, minced, 2-3 cups fresh spinach, juice of one lemon, 1 lb clean peeled shrimp, black pepper to taste, 2 tsp oregano, Red chili flakes to taste, 3 oz cream cheese, 1/2 cup heavy cream, 1/2 can tomato paste, Parmesan cheese and fresh parsley. 1 lb linguine pasta, and 1/2 cup pasta water
I set up this ring light because the lighting in my house is terrible and G my little handsome was helping.
First step and good tip too, if you are using frozen shrimp, run it under room temp water to defrost and it also helps the shrimp taste better and removes excess iodine flavor that frozen shrimp tends to have.
Who are these kids and why are they getting so big……… aaahhh
Let’s Cook
Start dicing your onions, lemons in half removing seeds, go ahead open up the tomato paste and get those seasoning out.
If you haven’t tried Kerry gold butter take this as your sign, it is superior!! Yes, it costs more but it is so very worth it.
Add butter, onions and garlic to pan to soften.
Squeeze in juice of half a lemon
Then add in your shrimp, black pepper to taste, but a good amount, 2 tsp oregano and 1-2 tsp (or more) red chili flakes Let cook about 3-5 minutes
Then add your fresh spinach and add salt and let wilt down.
Meanwhile boil your pasta, save some of the pasta water for later use.
After shrimp is fully cooked add in your cream and cream cheese.
Mix well stirring and let bubble and thicken some.
Turn off heat, Then add in your cooked pasta, and Parmesan cheese directly to the pan.
Ladle in some pasta water to loosen sauce a bit.
Finish off with the other half of the lemon and fresh parsley.
Another quick tip, save the other half of your tomato paste, wrap in plastic wrap and freeze to use when you surely make this again.
Serve with garlic bread and enjoy.
